RICE PUDDING (Reina I., El Salvador)
Ingredients:
1 cup of rice
cinnamon to taste
2 cups of sugar
1/2 gallon of whole milk
Instructions:
1. Cook rice with cinnamon in large pot until rice is very very soft.
2..Add milk and stir for about 5 minutes.
3. Add the sugar and bring to a boil for 5 minutes. Remove from heat.
Note: Can be served hot or cold.

FLAN (Ivonne P., Colombia)
Ingredients:
1 can sweetened condensed milk
1 can of 2% milk (use empty condensed milk container to measure)
4 eggs
2 tsp. vanilla
2 cups of sugar
Instructions:
1. Preheat oven to 375 degrees.
2. Put sugar in small saucepan. Add just enough water to cover sugar. Heat mixture and stir constantly unti sugar is dissolved and caramel colored.
3. Pour mixture into bottom of a 9 inch dish and swirl until bottom of dish is covered.
4. Place other ingredients in blender and blend until smooth. Pour into dish.
5. Bake for 45 minutes, cool on wire rack. Refrigerate for 4 hours or overnight.
6. To serve, run small spatula around edge of dish. Place serving plate on top of dish and turn over, shaking gently to release.
Brown Sugar Smokies (Alidis S., Colombia)
Ingredients:
1lb bacon
1 (16oz) package little smokie sausages
1 cup of brown sugar, or to taste
1 package toothpicks or wooden skewers
Instructions:
1. Preheat to 350 degrees.
2. Cut bacon into 1/3 strips and wrap each strip around a sausage. Place wrapped sausages on toothpick or skewers.
3. Arrange skewers on a baking sheet and sprinkle liberally with brown sugar.
4. Bake until bacon is crisp and brown sugar is melted. (approx. 20 minutes)
